Date balls

We love these date balls and we have made so many variations that I can't even keep up. The recipe here can be made with cashews, peanuts, almonds and well almost every nut you can think of. We usually make them with cashew nuts and peanut butter. I often add a teaspoon of chia seeds and ad a little more nut butter to make the date-dough smooth.

100 grams of cashews

150 grams Dates without stones

2-3 tbsp nut butter

And if you like coconut crumble or nut sprinkles to roll them in. 

If the dates are a bit hard,  I usually run them through a garlic press to soften them.   The nuts are blended into flour and kneaded together with dates and nut butter. The balls can be rolled in coconut crumble but can also be easily enjoyed without.

The good thing about the recipe is that there is plenty for kids to help with - Mathilde loves pressing dates through the garlic press and rolling the balls - and all the ingredients can also be enjoyed in the process.
